Our history

This is how Sinapi opens the door for us.

In October 1966, at an altitude of 1850 metres, a veteran chef, girding on his apron and preparing a fondue with the finest cheeses, smiled deeply. Delighted by the mixture of textures and warm fragrances, a thought crossed his mind: ‘Maybe one day my descendants will still be passionate about fondue’.

Almost at the same time, a young maître d’, 3,000 kilometres away and at sea level, was tying his bow tie. With care, he was preparing to captivate personalities from all over the country with his painstaking and careful service. And he smiled, as those who live near the sea smile, with a thought in his head: ‘Perhaps my descendants will enjoy experimenting with the senses as much as I do’.

Today, a grandson of this family, drinking from the tradition of his grandparents, and encouraged by the memory of a memorable gastronomic past, decided to continue the story of his ancestors, with the tenacity of those who love what they do and why they do it, and with the passion of those who believe that serving a good dish seasoned with ancient mustard, as old as the Romans, is a gift for the senses and, above all, a ceremony of affection for good cuisine.
